Togther with our local crew Agenio and Ahadu, they just touched down in Sidamo in the wonderful Jimma region. Known best for its bustling coffee market, Sidamo is a beehive of buyers and sellers. How to decide what to buy? Leave nothing to chance — start cupping on the spot. This is how Jose and his crew do it. Step 1:  brew some coffee in cute little cups. Step 2: Sniff and slurp until you find the right taste. Step 3: Get back to the market quickly and buy up the batch. Lucky are the beans that Jose brings back to Addis Ababa for some serious roasting.
